Pharaoh Egyptian Rice - 10KG

Egyptian rice, 10kg. Short grain, the rice that holds together for koshary, for mahshi, and for Egyptian rice with vermicelli. It takes up flavour and keeps its shape. Rice pudding, roz bel laban, uses it too.

A restaurant that serves those plates keeps the 10kg bag. A home cook can, if rice is a daily pot. Ten kilos is still a store-cupboard sack, not a 1kg packet.

Cool and dry, bag closed, off the floor. Rinse it. Measure the water for the dish you are cooking. Short grain does not behave like basmati.
