Dried lemons, 1kg. Whole loomi, sour and a little smoky. A Gulf kitchen pierces them and drops them into machboos or a biryani. Persian gormeh sabzi and an Iraqi stew use them the same way. Grind them when a spice blend needs loomi powder.

The kilo is what a restaurant cooking Khaleeji food stores. One lemon flavours a pot. You do not crumble the whole bag into one rice.

Cool and dry, bag closed. They should be hard. If they are soft, they have taken on moisture and the sour taste is dull.
