Omega channa dal, 1kg. Split Bengal gram, the split brown chickpea, with a nutty flavour and a firm bite once it is cooked. Indian and South Asian kitchens simmer it into dal, and it holds its shape in a curry.
Rinse it, soak it, then simmer until tender. It goes into dal, sambar and curries, into soups and stews, and into snacks and namkeen. Ground, it works in batters in the besan style. Restaurants cook it by the pot. A 1kg bag is also a normal shop size, so a home pot uses the same pulse.
Protein and fibre are why it sits on the menu as the main, not a sprinkle. Keep the bag cool, dry and closed.
