Mother's Recipe Madras Curry Powder - 500G

Madras curry powder, 500g. Hotter and sharper than a mild curry powder. Chillies, coriander, cumin, turmeric, fenugreek, mustard seed and pepper are the blend. Madras curries are the pot. Chicken, lamb and vegetable curries take it. A marinade, a dry rub and a curry roux use it.

An Indian kitchen and a home cook both use the 500g. Heat is medium to hot. Taste it before you scale a recipe written for a mild powder.

Cool and dry, tin shut. The 500g is a household and small-kitchen size. A hotel curry section that cooks all day may want a kilo of a house blend instead.
