Canola oil, 3 litres. Lesieur refines it so the taste stays light and neutral, and the smoke point is high enough for frying. The bottle is 100% canola, also called rapeseed.

Kitchens deep-fry and pan-fry in it, then sauté and stir-fry when the oil should not taste of anything. Baking and batters take it. So do dressings and marinades, when you want the vinegar and the herbs to lead.

Three litres is a working bottle for a restaurant fryer top-up and for a busy home kitchen that fries more than once a week. Keep the cap on. Heat and air are what make a neutral oil taste tired.
