Grape seed oil, 500ml. Abel presses it light and neutral, with a high smoke point, so frying, sautéing, and a vinaigrette can share the bottle. Vitamin E is naturally in it, and the fat is mostly linoleic. The other ingredients in the dish should lead. This oil should not.

Searing, stir-fries, mayonnaise, emulsions, baking, and marinades all take it. A professional kitchen and a home pan both use 500ml. Don't buy it for a strong olive-oil finish. You will not taste one. That is the point, until the day you wanted olive oil and grabbed the wrong bottle.

Store it cool, out of sunlight. Neutral oils stale quietly. Smell the cap before you emulsify a litre of mayonnaise.
