Ricotta, 250g. Ambrosi, from Lombardy. Fresh whey cheese, soft, a little grainy, milky and lightly sweet. Chilled, not a hard grating cheese. Milk allergen. The tub is the retail size a small Italian kitchen and a home cook both use.
A restaurant fills lasagna, cannelloni, ravioli, and gnocchi with it, or spoons it on a pizza with greens and lemon. A pastry section uses it for cannoli, cassata, and cheesecake. At breakfast, a cafe serves it with honey, fruit, and pistachios. It also works as a spread or a dip.
Keep it at 2-4°C. Once the tub is open, finish it within 3 to 5 days. Don't freeze it if you want the texture a filling needs. The 250g tub is one recipe, not a hotel storeroom block.
